Coast-to-Coast Sweetpotato Applesauce ~ Recipe ReDux Sponsored Recipe Contest

I’ve spent the week getting to know California sweetpotatoes; not to be confused with other sweet potatoes, white potatoes and yams! These sweet spuds add great flavor and nice nutrition (including fiber, protein, vitamins A and C) to dishes. Earlier this week, I made Smokey Sweetpotatoes and further explored the interesting harvest of these sand-grown and hand-processed vegetables.
This week some good ole’ New York apples also entered my kitchen (with the request for pie – thanks dad). Wanting to combine the two in a versatile dish (perfect for a snack, side or as an ingredient) I made these California sweetpotatoes and New York apples into Coast-to-Coast Sweetpotato Applesauce. I couldn’t stop there – below you will also find how I incorporated this recipe into my morning oatmeal.
Coast-to-Coast Sweetpotato Applesauce
Makes approximately 6 – ½ cup servings
Prep Time: 20 minutes
Cook Time: 35 minutes
1 medium California Sweetpotato, peeled and chopped
2 ¼ lbs assorted locally-grown apples (approximately 6 small-medium apples), peeled and chopped
¾ cup water (for a thicker sauce; add more for thinner consistency)
½ tsp. ground cinnamon
¼ cup light brown sugar (optional)
In a heavy-bottomed pot over medium-high heat, combine chopped sweetpotato, apples, water and cinnamon. With the lid on, cook for approximately 35 minutes or until apples and sweetpotatoes are tender enough to mash, stirring occasionally. Remove from heat and stir in brown sugar, if desired. With the back of a spoon or a [sweet]potato masher, mash to desired consistency. Enjoy hot or cool in refrigerator.
This dish makes an excellent snack or side dish. In addition, it’s a great addition to yogurt, oatmeal or wraps!
Here is how I added it to my oatmeal:
Oatmeal with Sweetpotato Applesauce
Makes one serving
⅓ cup old fashioned oats
¼ cup Coast-to-Coast Sweetpotato Applesauce (recipe above*)
1 tsp. ground flaxseed
⅓ cup boiling water (½ cup or more for thinner oatmeal)
Combine all ingredients in a microwave safe bowl. Microwave for 35 seconds. Stir and enjoy!
*If you excluded the optional brown sugar, you may want to add a small amount of your preferred sweetener to the oatmeal.
