Summer Parfait with Honey Almond Oats and Berry Rhubarb Sauce ~ Recipe ReDux Sponsored Recipe Contest

Honey is an ingredient that people may shy away from but for me it’s an ingredient I embrace. When I get “the eye” — you know — the one that wonders why a dietitian is using or buying honey… I simply explain the concept of moderation, but further than that, there is a concept of quality ingredients. Honey is like olive oil in that when you choose a quality product, you can add immense flavor without using large quantities that gets to the point of adding too much sugar (or too much fat, in the case of olive oil). Honey is a great way to enhance a dish with flavor. Here is a delicious parfait recipe that incorporates the sweetness from honey in the Berry Rhubarb Sauce (to balance the tart rhubarb) and adds fragrant flavor to the Honey Almond Oat topping. The sauce is a great use for honey because its fluid consistency makes it easier to incorporate without needing the crystals of sugar to dissolve. For ingredients like rhubarb, depending on how tart it is, you may need to fiddle with the sweetener added and honey allows you to make this adjustment towards the end of cooking when the flavors have had the chance to marry. Being able to tailor the sauce to the right balance is a great benefit to bring out the best combination of sweet and tart. For the Honey Almond Oats, honey is an excellent sweetener because the different varieties of honey give you the opportunity to add aromatic flavor in addition to sweetness. I used an orange blossom variety for its fragrant taste. Assemble this parfait in adorable mini trifle bowls—a perfect (and impressive) dessert for parties.

Tip of the day! I learned this in my scientific principles of food class in college—when measuring honey, give the measuring cup a quick spritz of cooking spray or wipe very lightly with oil and that honey will slip right out when it’s time to pour. You’re welcome. 

Summer Parfait with Honey Almond Oats and Berry Rhubarb Sauce

Berry Rhubarb Sauce

Ingredients:

2 cup chopped rhubarb (~12 oz)

6 oz raspberries

6 oz strawberries

¼ cup water

3 Tbsp + 1 tsp honey (more as needed)

Directions: 

In a saucepan, combine all ingredients. Bring to a boil and simmer on medium heat for about 20 minutes, stirring frequently, until sauce has thickened and reduced. Remove from heat to cool. Refrigerate.

Honey Almond Oats

Ingredients:

½ cup sliced almonds

½ cup old fashioned oats

1 Tbsp oil

2 Tbsp honey (I used an orange blossom variety)

1/8 tsp. almond extract

Directions:

Preheat oven to 350°F. Combine oats and almonds in a bowl. In a separate bowl, combine oil, honey and almond extract. Combine dry and wet ingredients and mix well. Spread on a sheet pan and bake at 350°F for about 10-15 minutes or until golden. Stir once after about 5-7 minutes. Remove from oven and let cool.

Summer Parfait with Honey Almond Oats and Berry Rhubarb Sauce

Ingredients:

Yogurt (use vanilla or plain, regular or Greek yogurt)*

Berry Rhubarb Sauce

Honey Almond Oats

Mint leaves, optional

Directions:

Assemble parfait in layers beginning with yogurt, followed by Berry Rhubarb Sauce and topped with Honey Almond Oats. For mini parfaits, use about 1-2 Tbsp of Berry Rhubarb Sauce or Honey Almond Oats per layer. Garnish with a mint leaf.

*This parfait used 0% plain Greek yogurt.

        Yes, I think we do, the girls are doing the planting. I’am going to show Susie your parfait for the DIG (dinner in the garden) party, I don’t think we can take any honey from the bees in august. We started with two hives, and Susie captured four swarms. Now we have six hives!

        Mercedes is doing fine, a post is coming soon, been busy as Bees!
